Simplest shopping cart is a third party one I know of. Mal's http://www.mals-e.com/home.php 8.00 a month paid quarterly for the non Free side that lets you pass your customers on to the merchant account gateway. Real simple form you place on your web pages. It's a shopping cart or Add To Cart button.
You could also use Google Payments. Easy to set up no monthly fees 2% and $0.20 per transaction. http://checkout.google.com/sell
Mals has integrated Google or you just place GP cart buttons on your web pages. Going that route you illuminate 96.00 a year in Mals fees.

I'd stay away from cookie cutters too. I've been playing with free osMax and OSCommerce free cart and Zen. Both way to technical even for me who has designed and ran an e commerce site for over 7 years and is my only source of income.
